A successful zero waste cafeteria program starts with waste reduction and then addresses the reuse of any surplus food or supplies. Most importantly though, a well-designed recycling and composting effort must be in place in both the front and back of house. Unfortunately this is the part of getting to zero waste that is often the most difficult to manage.
